This is the gaiwan (蓋碗, a lidded bowl and one of the most versatile pieces of teaware) we recommend for beginners and everyday tea drinkers. It’s also the one we use in the studio every day.

Made from lightweight porcelain, it’s easy to hold, comfortable to pour from and simple to clean. The wide rim makes handling the lid and bowl easy, with less chance of getting your fingers too close to the heat. If you’re new to brewing with a gaiwan, this is a great one to start with.

Hand-thrown in Jingdezhen, China, this 100ml gaiwan is a comfortable size for two. Our go-to ratio is 6g of tea to 100ml of water, making it a great match for our oolong collection. Brew at 95 to 100°C, and you’re good to go.

Gongfu Style – Gaiwan (蓋碗 | Lidded Tea Bowl)

A gaiwan can look a little intimidating, but it’s one of the most versatile pieces of teaware you can own. It’s at the heart of Gongfu-style brewing, using more leaves, less water and multiple short brews to slowly discover how the tea’s flavour changes. With good-quality oolong, you can typically get 7–8 brews from the same leaves.

Once you get the hang of it, it might just become your everyday teaware.

Care
Avoid using a dishwasher or harsh detergents. Rinse with warm water after use and hand wash with a soft sponge when needed.

A note on porcelain
Porcelain is smooth, durable and easy to care for. Its non-porous surface is less likely to absorb tea stains, so a simple rinse after use is often enough. Porcelain can become hot when filled with tea, so handle with care. While durable, it can chip or break if dropped or knocked.
